Quick & Healthy Recipe for Soul Smothered Chicken

This meal of browned chicken in a savory chicken gravy sauce is best when served over a bed of white rice. This recipe makes for 8 servings, so it’s a dish to enjoy with your whole family or all your friends!


1/2 cup butter
3/4 cup all-purpose flour
1/4 teaspoon ground black pepper
1/2 teaspoon ground black pepper
3 cups chopped yellow onions
3 cloves garlic, chopped
1 cup chopped celery
1/4 teaspoon cayenne pepper
2 teaspoons salt
1 whole chicken, cut into pieces
1 teaspoon salt
2 cups chopped carrots
3 cups chicken broth
3 tablespoons all-purpose flour



1. Warm the butter in a large frying pan over medium-high heat
2. Season chicken pieces with salt and pepper
3. Cover with flour
4. Put the chicken in the skillet
5. Brown on all sides
6. Put chicken aside, and drain skillet, reserving the butter
7. Reduce skillet heat to medium-low, and stir in celery, onions, carrots and garlic
8. Cook 5 minutes, until chicken looks or feels tender
9. Stir in the flour, and cook 5 minutes more
10. Pour in the chicken broth
11. Season with salt, pepper and cayenne pepper
12. Boil, and reduce heat to low
13. Return chicken to the skillet, cover, and continue cooking 30 minutes, until chicken juices run clear and gravy has thickened
